The WOW! factor
When we lived in Manhattan's Upper East Side we loved going out for dessert.  We were young  artists who wanted to partake in the excitement of NYC.s culinary delights but  living on a tight budget.  Desserts became our treat!  But, we were often disappointed with the quality of the desserts. The cake was a bit stale, the pie was too sweet, or the ice cream was too dense. Perhaps dessert typically takes a second seat to main meals at restaurants.  Neither of us are chefs, or culinary experts, but we do know when something is good! What if we opened a cafe where the focus was dessert? Jon picked up a book on the history of chocolate. We were intrigued by the origins, processes, and history of this amazing tree.  And so the idea was born. Our idea for The Chocolate Room  was to offer American classic childhood favorites done extraordinarily well. The  opening menu on Wednesday, January 26, 2005 in Brooklyn’s beautiful neighborhood of Park Slope, consisted of less than ten items all on one page. We printed it on our home printer across the street an hour before we opened our doors, at noon. Brooklyn greeted us with excitement, enthusiasm, and a desire for chocolate!
The original menu was developed with our next door neighbor, Margaret Kyle who was in her last year of culinary school. We spent almost a year, brainstorming, researching, tasting, and trying again. With a dessert cafe, we faced a natural challenge in that too much sugar can make one sick, and yet, all of our items would have some sugar. If something is too sweet, or too rich, we knew our guests wouldn’t come back, so we set out to create desserts that were just right. We wanted our patrons to walk out satisfied, and craving more.
With our name, The Chocolate Room, we knew we had to have the best chocolate cake in Brooklyn. We tasted our competitors, and decided what we liked or didn’t like, and after many months, created Brooklyn’s best chocolate cake.

Each new product had to pass our “wow” test. Was it so incredibly delicious that it made you say, “wow”!?  It was important to us that every  item  on our menu stops time for a moment, because it’s simply that good. LIfe is short, and each moment matters! Chocolate layer cake, chocolate pudding, dark hot chocolate, chocolate caramel popcorn, fresh mint chip ice cream, caramel sea salt bonbons, and more. We’ve painstakingly developed each recipe to leave you perfectly satisfied.

The process has paid off. Each of our products has acquired a loyal following over the decades of business. It’s incredibly rewarding to see families come back year after year for their favorite birthday or holiday cake, and neighbors come in daily for their favorite cookie, or scoop of ice cream.  We’ve worked hard to keep our standards high, and the product simple, but so delicious.
19 years later, we continue to enjoy many of our original recipes. Many haven’t changed. And as we play with new flavor combinations for new products, we continue to push creativity, and ask ourselves what flavors compliment chocolate? What flavors are we missing? Is it over the top delicious? And, of course, the final question is always, how can we make it better?
